Description

A delicious and healthy Keto Zucchini Casserole with Ground Beef that is perfect for a low-carb diet.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
  5. In a baking dish, layer half of the zucchini slices, followed by the beef mixture, and then the remaining zucchini slices.
  6. Top with shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly.
