A delicious and healthy Keto Zucchini Casserole with Ground Beef that is perfect for a low-carb diet.
Ingredients

- 2 medium zucchinis, sliced
- 1 lb ground beef
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
- In a baking dish, layer half of the zucchini slices, followed by the beef mixture, and then the remaining zucchini slices.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly.
