- 1 tablespoon olive oil
- 1 small onion (diced)
- 1 bell pepper (chopped)
- 2–3 cloves garlic (minced)
- 2 tablespoons taco seasoning (sugar-free)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup sour cream
- ½ cup cream cheese (softened)
- 2 large eggs
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella
- Diced tomatoes (optional)
- Jalapeños (optional)
- Avocado or guacamole (optional)
- Black olives (optional)
- Cilantro (optional)
- Salsa (optional)
- Green onions (optional)
Instructions
- Heat olive oil in a skillet.
- Add ground beef and cook until browned, breaking apart with a spoon.
- Add onion, garlic, and bell pepper.
- Cook until softened.
- Stir in taco seasoning, salt, and pepper.
- Simmer for 2 minutes to blend the flavors.
- In a bowl, whisk together sour cream, cream cheese, and eggs.
- Add half of the cheddar and half of the mozzarella.
- Mix until creamy.
- Preheat oven to 350°F (175°C).
- Grease a baking dish.
- Spread the cooked taco meat evenly across the bottom.
- Pour the creamy cheese mixture over the top.
- Sprinkle the remaining cheese.
- Bake for 25–30 minutes, until bubbly and golden.
- Let cool for 5 minutes.
