  • 2 tablespoons taco seasoning (sugar-free)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup sour cream
  • ½ cup cream cheese (softened)
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella
  • Diced tomatoes (optional)
  • Jalapeños (optional)
  • Avocado or guacamole (optional)
  • Black olives (optional)
  • Cilantro (optional)
  • Salsa (optional)
  • Green onions (optional)

Instructions

  1. Heat olive oil in a skillet.
  2. Add ground beef and cook until browned, breaking apart with a spoon.
  3. Add onion, garlic, and bell pepper.
  4. Cook until softened.
  5. Stir in taco seasoning, salt, and pepper.
  6. Simmer for 2 minutes to blend the flavors.
  7. In a bowl, whisk together sour cream, cream cheese, and eggs.
  8. Add half of the cheddar and half of the mozzarella.
  9. Mix until creamy.
  10. Preheat oven to 350°F (175°C).
  11. Grease a baking dish.
  12. Spread the cooked taco meat evenly across the bottom.
  13. Pour the creamy cheese mixture over the top.
  14. Sprinkle the remaining cheese.
  15. Bake for 25–30 minutes, until bubbly and golden.
