Description

Ingredients

  • 2 medium zucchinis
  • 1 lb shrimp, peeled and deveined
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Spiralize the zucchinis to create zoodles and set aside.
  2. In a large skillet, melt butter over medium heat and add minced garlic, sautéing until fragrant.
  3. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the Parmesan cheese until melted and the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Add the zoodles to the skillet and toss to coat in the sauce.
  8. Cook for an additional 2-3 minutes until zoodles are tender.
