  • 1 lb sausage (mild or spicy, remove casings if using links)
  • 8 large eggs
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup heavy cream
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Heat a skillet over medium. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through (about 6–8 minutes). Drain excess fat if needed.
  3. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth and slightly frothy.
  4. Stir the cooked sausage, shredded cheese, diced bell peppers, and diced onions into the egg mixture so everything is evenly distributed.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 30–35 minutes, or until the center is set and the top is lightly golden (a knife inserted near the center should come out clean).
  7. Let the casserole rest for 5–10 minutes before slicing and serving.
