- 1 lb sausage (mild or spicy, remove casings if using links)
- 8 large eggs
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/2 cup heavy cream
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Heat a skillet over medium. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through (about 6–8 minutes). Drain excess fat if needed.
- In a large bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth and slightly frothy.
- Stir the cooked sausage, shredded cheese, diced bell peppers, and diced onions into the egg mixture so everything is evenly distributed.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 30–35 minutes, or until the center is set and the top is lightly golden (a knife inserted near the center should come out clean).
- Let the casserole rest for 5–10 minutes before slicing and serving.
