  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper (to taste)
  • ½ teaspoon red pepper flakes
  • Fresh parsley (for garnish)
  • Lemon wedges (for serving)
  • 4 chicken breasts (boneless and skinless)
  • ¼ cup olive oil
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic (minced)

Instructions

  1. Bring a large pot of salted water to a boil. Add the halved baby potatoes and parboil for 8 minutes until slightly tender but not fully cooked. Drain and set aside.
  2. While potatoes boil, whisk together ¼ cup olive oil, soy sauce, honey, Dijon mustard, minced garlic, and a pinch of pepper. Toss chicken breasts in the marinade ensuring they are coated well, then let them sit for at least 10 minutes to absorb the flavors.
  3. Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add the drained potatoes cut-side down and sear without stirring for 3-4 minutes until a golden-brown crust forms. Flip and cook another 2-3 minutes until browned on the other side. Remove the potatoes from the skillet and set aside.
  4. Add the marinated chicken breasts to the skillet and sear for 2-3 minutes per side until golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C) for safe consumption.
  5. Push chicken to one side of the skillet, add potatoes back in, and cook together for an additional 5 minutes. Stir in red pepper flakes and adjust salt and pepper to taste to ensure balanced seasoning.
  6. Remove skillet from heat. Sprinkle freshly chopped parsley over the dish and serve with lemon wedges for a bright, fresh finish.
