- 4 chicken breasts (boneless and skinless)
- ¼ cup olive oil
- 3 tablespoons low sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 4 cloves garlic (minced)
Instructions
- Bring a large pot of salted water to a boil. Add the halved baby potatoes and parboil for 8 minutes until slightly tender but not fully cooked. Drain and set aside.
- While potatoes boil, whisk together ¼ cup olive oil, soy sauce, honey, Dijon mustard, minced garlic, and a pinch of pepper. Toss chicken breasts in the marinade ensuring they are coated well, then let them sit for at least 10 minutes to absorb the flavors.
- Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add the drained potatoes cut-side down and sear without stirring for 3-4 minutes until a golden-brown crust forms. Flip and cook another 2-3 minutes until browned on the other side. Remove the potatoes from the skillet and set aside.
- Add the marinated chicken breasts to the skillet and sear for 2-3 minutes per side until golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C) for safe consumption.
- Push chicken to one side of the skillet, add potatoes back in, and cook together for an additional 5 minutes. Stir in red pepper flakes and adjust salt and pepper to taste to ensure balanced seasoning.
- Remove skillet from heat. Sprinkle freshly chopped parsley over the dish and serve with lemon wedges for a bright, fresh finish.
