  • 0.5 teaspoon baking soda
  • 0.75 cup jam or preserves (your favorite flavor)
  • 0.75 cup reserved cookie dough (crumbled topping)

Instructions

  1. Preheat your oven to 350°F and line an 8×8 pan with foil or parchment paper, leaving an overhang on two sides for easy removal.
  2. Whisk together the melted butter, brown sugar, and vanilla in a large bowl until well combined.
  3. Combine the flour, oats, salt, and baking soda with the butter mixture and stir gently until well mixed.
  4. Refrigerate about ¾ cup of the cookie dough for later use.
  5. Press the remaining dough evenly into your prepared pan.
  6. Bake the base for 10 minutes.
  7. Spread your choice of jam over the baked cookie base.
  8. Crumble the reserved cookie dough over the jam layer.
  9. Return the pan to the oven and bake for another 15-18 minutes.
