- 0.5 cup light brown sugar (packed)
- 1 teaspoon pure vanilla extract
- 1.25 cups all purpose flour
- 1 cup old fashioned oats
- 0.25 teaspoon salt
- 0.5 teaspoon baking soda
- 0.75 cup jam or preserves (your favorite flavor)
- 0.75 cup reserved cookie dough (crumbled topping)
Instructions
- Preheat your oven to 350°F and line an 8×8 pan with foil or parchment paper, leaving an overhang on two sides for easy removal.
- Whisk together the melted butter, brown sugar, and vanilla in a large bowl until well combined.
- Combine the flour, oats, salt, and baking soda with the butter mixture and stir gently until well mixed.
- Refrigerate about ¾ cup of the cookie dough for later use.
- Press the remaining dough evenly into your prepared pan.
- Bake the base for 10 minutes.
- Spread your choice of jam over the baked cookie base.
- Crumble the reserved cookie dough over the jam layer.
- Return the pan to the oven and bake for another 15-18 minutes.
- Cool the pan on a wire rack completely before slicing into bars.
