Spicy Jalapeno Chicken Skillet That’ll Ignite Your Tastebuds

- 1 pound boneless skinless chicken thighs
- 2 tablespoons cornstarch
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons extra virgin olive oil
- 1/4 cup soy sauce
- 1/4 cup water
- 2 tablespoons light brown sugar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 medium yellow onion, diced
- 2 pieces jalapeno peppers, sliced
- 1 tablespoon sesame seeds
- 4 cups cooked white rice
Instructions
- In a large mixing bowl, combine the chicken pieces with cornstarch, salt, and pepper. Toss everything together until the chicken is evenly coated. Set this aside.
- In a separate medium bowl, whisk together water, soy sauce, brown sugar, sesame oil, and minced garlic. Ensure all the ingredients are well combined, then set aside.
- Heat the olive oil in a large nonstick skillet over medium-high heat. Once shimmering, add the chicken and cook for 2-3 minutes on each side until golden brown.
- Transfer the chicken to a plate and cover to keep warm. In the same skillet, add diced onions and sliced jalapenos. Cook for about 4-6 minutes until softened.
- Return the cooked chicken to the skillet along with the soy sauce mixture. Stir to combine and cook for another 2-3 minutes.
- Plate the Jalapeno Chicken over cooked rice and garnish with sesame seeds.
