- 1 tablespoon olive oil
- ½ medium onion, finely chopped
- ½ red bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 pound bulk turkey sausage
- 1 pound ground turkey breast
- 2 slices sandwich bread, torn into small pieces
- ¼ cup milk
- ½ cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 2 tablespoons tomato paste
- 2 large eggs
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup marinara sauce, plus additional for serving
- ¾ cup shredded mozzarella cheese
- Cooked pasta, for serving (optional)
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the finely chopped onion, red bell pepper, and minced garlic to the skillet and sauté for approximately 5 minutes, or until the vegetables have softened.
- Remove the sautéed vegetables from heat and allow them to cool slightly before proceeding.
- In a large mixing bowl, combine the cooled sautéed vegetables with the bulk turkey sausage, ground turkey breast, torn sandwich bread, milk, grated Parmesan cheese, dried Italian seasoning, tomato paste, eggs, salt, and black pepper. Use your hands to thoroughly mix the ingredients until everything is well integrated.
- Transfer the prepared meatloaf mixture onto a sheet pan that has been lightly coated with cooking spray. Shape the mixture into a uniform loaf.
- Place the shaped meatloaf into the preheated oven and bake for 50 minutes.
- After the initial 50 minutes of baking, remove the meatloaf from the oven. Evenly spread the ½ cup of marinara sauce over the top of the loaf, then sprinkle generously with the shredded mozzarella cheese.
- Return the meatloaf to the oven and continue baking for an additional 10 minutes, or until the mozzarella cheese is fully melted and bubbly.
- If a golden-brown finish is desired, briefly activate the broiler. Watch closely to prevent the cheese from burning.
- Allow the meatloaf to rest for a few minutes before slicing to ensure it retains its moisture. Serve hot, optionally over cooked pasta, with additional marinara sauce as desired.
