Decadent Raspberry Cream Maritozzi Buns
Ingredients
Scale
- 300 ml Whole milk (warmed to help activate the yeast)
- 530 g Strong white bread flour
- 1 tbsp Fast-action dried yeast
- ½ tsp Fine sea salt
- 1 medium Free-range egg yolk
- 70 g Runny honey
- 60 ml Olive oil
- 300 g Raspberries
- 400 ml Whipping cream
- 70 g Icing sugar
- Extra icing sugar (for dusting)
Instructions
- Prepare the Dough: In a bowl, warm the milk slightly and mix in the yeast. Let it sit for 5 minutes until frothy. In a separate large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, egg yolk, honey, and olive oil. Mix until a dough forms.
- Knead: Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
- First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rest in a warm place for an hour or until it doubles in size.
- Shape Buns: Punch down the dough and divide it into equal pieces. Shape each piece into a bun and place them on a baking tray lined with parchment. Cover again and let them rise for another 30 minutes.
- Bake: Preheat the oven to 190°C (375°F). Bake the buns for 20-25 minutes until golden.
- Prepare Filling: Whip the cream until soft peaks form, then gently fold in the icing sugar and raspberries.
- Assemble: Once the buns are cool, slice them open and fill with the raspberry cream mixture. Dust with extra icing sugar before serving.
