- 1 cup natural unsweetened cocoa powder
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp espresso powder (optional)
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 2 tbsp milk (up to 1/4 cup total)
- 2 cups semi-sweet chocolate chips, divided
- Flaky sea salt (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder. Set aside.
- Cream softened butter with granulated sugar and brown sugar for 2-3 minutes until light and fluffy.
- Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
- Gradually add dry ingredients to wet ingredients on low speed until just combined.
- Fold in 1.5 cups of chocolate chips and add milk until the dough is combined.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- Scoop 2-tablespoon portions onto baking sheets, spacing them 2 inches apart. Press remaining chocolate chips on top.
- Bake for 10-12 minutes, rotating the sheet halfway through. Cookies are done when edges are set and centers are slightly soft.
- Let cookies rest on baking sheets for 5-7 minutes before transferring to a cooling rack. Sprinkle with flaky sea salt if desired.
