Description

Irresistible Double Chocolate Chip Cookies are rich, fudgy, and packed with semi-sweet chocolate chips. They are soft in the center with lightly crisp edges and enhanced with a hint of espresso powder.


Ingredients

  • 1 cup natural unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp espresso powder (optional)
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 tbsp milk (up to 1/4 cup total)
  • 2 cups semi-sweet chocolate chips, divided
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder. Set aside.
  3. Cream softened butter with granulated sugar and brown sugar for 2-3 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Gradually add dry ingredients to wet ingredients on low speed until just combined.
  6. Fold in 1.5 cups of chocolate chips and add milk until the dough is combined.
  7. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  8. Scoop 2-tablespoon portions onto baking sheets, spacing them 2 inches apart. Press remaining chocolate chips on top.
  9. Bake for 10-12 minutes, rotating the sheet halfway through. Cookies are done when edges are set and centers are slightly soft.
  10. Let cookies rest on baking sheets for 5-7 minutes before transferring to a cooling rack. Sprinkle with flaky sea salt if desired.
