Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • Olive oil
  • 4 tablespoons of butter
  • 2 cloves of fresh garlic, minced
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • Crusty French or Italian bread (or whole wheat/gluten-free if preferred)
  • Garlic powder for brushing
  • Shredded mozzarella cheese
  • Fresh parsley for garnish
  • Additional Parmesan cheese for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, and a sprinkle of garlic powder.
  2. In a skillet over medium heat, add a bit of olive oil and cook the chicken for about 6-7 minutes on each side, or until fully cooked.
  3. Let the chicken rest for a few minutes before slicing it into bite-sized pieces.
  4. In a saucepan, melt 4 tablespoons of butter over medium heat.
  5. Add 2 minced garlic cloves and sauté until fragrant (about 1 minute).
  6. Pour in 1 cup of heavy cream, stirring continuously.
  7. Once it starts to simmer, slowly whisk in 1 cup of grated Parmesan cheese until it’s smooth and creamy.
  8. Season with salt and pepper to taste, and then remove from heat.
  9. Preheat your oven to 375°F (190°C).
  10. Slice your bread in half lengthwise and place it on a baking sheet.
  11. Brush the cut sides with olive oil and sprinkle with a little garlic powder.
  12. Spread a generous layer of the Alfredo sauce over the cut sides of the bread.
  13. Lay the sliced chicken evenly on top, followed by a generous handful of shredded mozzarella cheese.
  14. Place the assembled bread in the preheated oven and bake for about 15 minutes, or until the cheese is melted and bubbly.
  15. For a golden finish, broil it for an additional 1-2 minutes, keeping a close eye to prevent burning.
  16. Once out of the oven, sprinkle with freshly chopped parsley and a bit more Parmesan if you like.
  17. Slice into pieces and serve warm.
