Description

These no-bake mini cheesecakes are quick to assemble with a buttery crust, airy filling, and topped with fresh berries – perfect for any occasion!


Ingredients

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • Fresh berries for topping

Instructions

  1. In a bowl, mix graham cracker crumbs with melted butter until evenly moistened.
  2. Press about 1–2 tablespoons of the crumb mixture into the bottom of each small cup or jar to form a crust.
  3. In a separate bowl, beat cream cheese with sugar and vanilla until smooth and creamy.
  4. In another chilled bowl, whip heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture.
  6. Spoon the filling into the crusts, filling nearly to the top.
  7. Chill the cups for at least 2 hours.
  8. Top with fresh berries just before serving.
