- 2 large eggs
- 1 cup yogurt (can substitute with applesauce for a lighter version)
- ½ cup vegetable oil
- 2 cups peeled, diced apples (preferably Granny Smith or your favorite variety)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with liners or grease it lightly.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat together the eggs, yogurt, and vegetable oil until smooth.
- Gradually fold the wet ingredients into the dry mixture and stir gently until just combined.
- Gently fold in the diced apples until evenly distributed.
- Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.
- Sprinkle a little cinnamon sugar on top for an extra touch.
- Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
- Enjoy warm or at room temperature!
