These Andes Mint Chocolate Truffles combine creamy chocolate and refreshing mint for a simple, crowd-pleasing homemade treat that’s perfect for gifting or special occasions.

- About 30 pieces Andes mints
- 2 cups (340g) semi-sweet chocolate chips
- ¾ cup (180ml) heavy cream
- 2 tablespoons (28g) unsalted butter
- 1 teaspoon vanilla extract
- Optional: a pinch of salt
Instructions
- Unwrap all the Andes mints and chop them into small chunks about pea-sized. Set aside.
- In a medium saucepan, gently warm the heavy cream and unsalted butter over medium-low heat until steaming and butter is fully melted, not boiling.
- Place chocolate chips in a heatproof bowl. Pour the warm cream mixture over the chocolate and let sit for a minute to soften. Stir gently until glossy and combined.
- Stir in vanilla extract and chopped Andes mints, allowing the heat to soften the mints and infuse flavor.
- Pour the mixture onto a parchment-lined baking sheet, spread evenly, cover loosely with plastic wrap, and refrigerate for 1-2 hours until firm but scoopable.
- Using a small cookie scoop or spoon, portion out small balls of ganache and roll quickly between palms to form smooth spheres. Chill again if ganache becomes too soft.
- Optional: Melt additional chocolate chips separately and dip truffles in it, or dust with cocoa powder or crushed Andes mints. Place on parchment-lined sheet to set.
- Chill the truffles in the fridge for 30 minutes until firm before serving.
