Ingredients

  • 8 oz dark chocolate (at least 60% cocoa)
  • ½ cup heavy cream
  • 2 tablespoons amaretto liqueur
  • ¼ cup unsweetened cocoa powder (for coating)

Instructions

  1. Chop the dark chocolate into small pieces and place it in a mixing bowl. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 2 minutes. Stir the mixture until smooth and the chocolate has fully melted.
  2. Stir in the amaretto liqueur. Mix until fully incorporated.
  3. Cover the bowl with plastic wrap and refrigerate the ganache for about 2 hours or until firm enough to roll into balls.
  4. Once the ganache has set, use a spoon or melon baller to scoop small portions of the ganache and roll them into balls with your hands.
  5. Roll each truffle in the cocoa powder, coating it evenly. Place the truffles on a parchment-lined baking sheet.
  6. Chill the truffles in the fridge for another 30 minutes. Once set, they’re ready to serve!
