- 8 oz dark chocolate (at least 60% cocoa)
- ½ cup heavy cream
- 2 tablespoons amaretto liqueur
- ¼ cup unsweetened cocoa powder (for coating)
Instructions
- Chop the dark chocolate into small pieces and place it in a mixing bowl. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 2 minutes. Stir the mixture until smooth and the chocolate has fully melted.
- Stir in the amaretto liqueur. Mix until fully incorporated.
- Cover the bowl with plastic wrap and refrigerate the ganache for about 2 hours or until firm enough to roll into balls.
- Once the ganache has set, use a spoon or melon baller to scoop small portions of the ganache and roll them into balls with your hands.
- Roll each truffle in the cocoa powder, coating it evenly. Place the truffles on a parchment-lined baking sheet.
- Chill the truffles in the fridge for another 30 minutes. Once set, they’re ready to serve!
