Instructions

  1. Begin by pulsing the garlic, lemon zest, salt, pepper, and thyme in a food processor until finely chopped. Then, add the stale bread and pulse until the mixture resembles coarse breadcrumbs. Set aside once combined.
  2. In a large bowl, whisk together the buttermilk and Dijon mustard. Submerge the chicken thighs and drumsticks in this mixture, cover with plastic wrap, and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper. Remove the marinated chicken from the buttermilk mixture, letting excess drip off. Place on the baking sheet and sprinkle breadcrumb mixture over each, pressing down to adhere.
