Description
A hearty and flavorful beef stew recipe inspired by Ina Garten.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, peeled and sliced
- 3 stalks celery, sliced
- 3 cloves garlic, minced
- 2 cups red wine
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 pound baby potatoes, halved
Instructions
- Season beef cubes with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Brown beef cubes on all sides, then remove from pot.
- Add onion, carrots, and celery to pot. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Pour in red wine and scrape browned bits from bottom of pot.
- Add beef broth, tomato paste, thyme, bay leaves, and browned beef.
- Bring to a simmer, cover, and cook for 1.5 hours.
- Add potatoes and cook for another 30 minutes.
- Remove bay leaves before serving.
