Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 pound baby potatoes, halved

Instructions

  1. Season beef cubes with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat.
  3. Brown beef cubes on all sides, then remove from pot.
  4. Add onion, carrots, and celery to pot. Cook until softened.
  5. Stir in garlic and cook for 1 minute.
  6. Pour in red wine and scrape browned bits from bottom of pot.
  7. Add beef broth, tomato paste, thyme, bay leaves, and browned beef.
  8. Bring to a simmer, cover, and cook for 1.5 hours.
  9. Add potatoes and cook for another 30 minutes.
  10. Remove bay leaves before serving.
