Cool off this summer with these refreshing Iced Tea Popsicles made with aromatic rosehips, strawberries, and raspberries.
Ingredients

- 2 ½ cups (600ml) filtered water
- 2 Tablespoons dried rosehips
- 1 tea bag raspberry leaf tea
- 6oz strawberries, thinly sliced (divided use)
- 6oz raspberries, halved (divided use)
- 3 Tablespoons (66ml) raw honey
- 10 capacity popsicle mold and sticks
Instructions
- In a medium saucepan, bring the water to a boil.
- Once boiling, turn off the heat and add the dried rosehips, raspberry leaf tea bag, and half of the sliced strawberries and raspberries.
- Cover the pan and let this mixture steep for 20 minutes.
- After steeping, strain the tea through a fine mesh strainer, pressing firmly on the solids to extract all the flavor.
- Stir in the raw honey until fully dissolved.
- Pour the tea mixture halfway into the popsicle molds, then add the remaining sliced fruit into each mold.
- Top off the molds with the remaining tea, and insert popsicle sticks.
- Freeze until solid, about 4-6 hours.
