Ingredients

  • 1 can coconut milk
  • ¼ cup maple syrup (or agave syrup)

Instructions

  1. Wash your lemons thoroughly. Cut them in half lengthwise and use a knife to carefully carve out the flesh.
  2. Place the lemon flesh in a blender. Add the can of coconut milk and your chosen sweetener.
  3. Blend the mixture until smooth and creamy.
  4. Pour the sorbet mixture back into the hollowed lemon halves.
  5. Freeze them for at least 360 minutes, or overnight for best results.
  6. As an alternative method, freeze the lemon flesh and pour coconut milk into ice molds. Once frozen, blend them together as before and return to the lemon cups.
  7. Serve and enjoy your refreshing treat!
