- 3 tablespoons butter or avocado oil
- 2 pounds chuck roast (cut into 1-inch chunks)
- 1.5 pounds yellow onions (diced)
- 2 bell peppers (diced)
- 5 teaspoons garlic (minced)
- 2 medium tomatoes (diced)
- 0.25 cup paprika (sweet or smoked)
- 0.5 teaspoon black pepper
- 2 small bay leaves
- 4.5–5 cups beef broth
- 2 large carrots (peeled and cut into chunks)
- 2 medium potatoes (peeled and cut into chunks)
- salt (to taste)
- parsley (chopped for garnish)
- sour cream (for serving)
Instructions
- Melt butter: In a large soup pot, melt 2 tablespoons of butter over medium-high heat. Season the beef chunks with salt and pepper, then brown them on all sides. Do this in two batches to prevent overcrowding.
- Sauté onions: Add 1 tablespoon of butter to the pot, then sauté the diced onions until they start to caramelize, about 12-15 minutes. Add the bell peppers and garlic, cooking for another 6-8 minutes.
- Mix in tomatoes: Stir in the diced tomatoes and cook for about 5 minutes until most of their liquid evaporates.
- Add spices: Remove the pot from the heat and stir in the paprika and black pepper.
- Combine ingredients: Return the browned beef to the pot. Pour in the beef broth and add the bay leaves, then bring the mixture to a boil. Reduce heat to medium-low, cover, and simmer for 1 ½ hours, stirring occasionally.
- Add veggies: Once the beef is almost tender, stir in the potatoes and carrots. Simmer for another 30-40 minutes, or until the potatoes are fork-tender and the beef is soft.
- Finish and serve: Discard the bay leaves, taste, and adjust the salt as needed. Garnish with chopped parsley and serve with a dollop of sour cream.
