  • 1.5 pounds yellow onions (diced)
  • 2 bell peppers (diced)

  • 0.25 cup paprika (sweet or smoked)
  • 0.5 teaspoon black pepper
  • 2 small bay leaves
  • 4.55 cups beef broth
  • 2 large carrots (peeled and cut into chunks)
  • 2 medium potatoes (peeled and cut into chunks)
  • salt (to taste)
  • parsley (chopped for garnish)
  • sour cream (for serving)

Instructions

  1. Melt butter: In a large soup pot, melt 2 tablespoons of butter over medium-high heat. Season the beef chunks with salt and pepper, then brown them on all sides. Do this in two batches to prevent overcrowding.
  2. Sauté onions: Add 1 tablespoon of butter to the pot, then sauté the diced onions until they start to caramelize, about 12-15 minutes. Add the bell peppers and garlic, cooking for another 6-8 minutes.
  3. Mix in tomatoes: Stir in the diced tomatoes and cook for about 5 minutes until most of their liquid evaporates.
  4. Add spices: Remove the pot from the heat and stir in the paprika and black pepper.
  5. Combine ingredients: Return the browned beef to the pot. Pour in the beef broth and add the bay leaves, then bring the mixture to a boil. Reduce heat to medium-low, cover, and simmer for 1 ½ hours, stirring occasionally.
  6. Add veggies: Once the beef is almost tender, stir in the potatoes and carrots. Simmer for another 30-40 minutes, or until the potatoes are fork-tender and the beef is soft.
  7. Finish and serve: Discard the bay leaves, taste, and adjust the salt as needed. Garnish with chopped parsley and serve with a dollop of sour cream.
