- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 1/2 teaspoons Sriracha
- 1 tablespoon lime juice
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/2 teaspoon sugar
- 8 oz lump crab meat, drained
- 3 green onions, chopped
- 1 cup shredded Monterey Jack cheese, divided
- 1/4 cup sweet chili sauce
- Fresh cilantro, for garnish (optional)
- For the Wonton Chips:
- Pinch of salt
- 24 wonton wrappers, cut in half
- Neutral oil for frying
Instructions
- Preheat oven to 350°F. Grease a small baking dish. Set aside some green onion tops for garnish.
- In a microwave-safe bowl, soften cream cheese for 45 seconds. Stir until smooth. Mix in mayonnaise, sour cream, Sriracha, lime juice, garlic, salt, and sugar.
- Gently fold in lump crab meat, the white and light green parts of the green onions, and 3/4 cup of shredded Monterey Jack cheese. Avoid overmixing.
- Spread the mixture into the prepared baking dish. Sprinkle the remaining 1/4 cup of cheese on top.
- Bake for 25 minutes, uncovered, until the dip is hot and bubbling.
- While the dip bakes, prepare the wonton chips: Heat about 1 inch of neutral oil in a skillet over medium-high heat until shimmering. Fry wonton wrapper halves in batches until golden brown and crispy, about 1-2 minutes per side. Drain on paper towels and sprinkle with a pinch of salt.
- Drizzle sweet chili sauce over the baked hot crab dip. Garnish with the reserved chopped green onion tops and cilantro, if using.
- Serve the hot crab dip immediately with the crispy wonton chips.
