- 1 box Knorr Selects Spinach & Artichoke Rice
- 4 pieces Chicken Breasts
- 1 large Sweet Potato, chopped
- 1 small Zucchini, sliced
- 1 medium Red Onion
- 1 cup Grape Tomatoes, halved
- 1/4 cup Honey
- 2 tablespoons Stone Ground Mustard
- 2 tablespoons Dijon Mustard
- 1 tablespoon Avocado or Olive Oil
- 1 tablespoon Honey Wine or Apple Cider Vinegar
- 2 cloves Garlic, minced
- 1 pinch Salt
- 4 slices Cooked Bacon, chopped
Instructions
- Whisk together the dressing ingredients in a measuring cup until smooth.
- Marinate chicken by pouring 1/3 of the dressing into a ziptop bag with the chicken breasts.
- Preheat the oven to 400°F (200°C). Drizzle a little avocado or olive oil on a baking pan and toss in the chopped sweet potatoes.
- Roast sweet potatoes for about 20 minutes or until tender.
- Heat a skillet over high heat and add 1-2 tablespoons of oil.
- Cook the chicken by placing it top side down in the skillet.
- Flip and finish cooking the chicken for another 6-7 minutes until thoroughly cooked.
- Add zucchini to the pan with more oil, cooking until browned and tender.
- Prepare the rice according to the package instructions.
- Assemble bowls by spreading the rice and topping it with chicken, sweet potatoes, zucchini, bacon, red onions, and tomatoes.
