This Honey Mustard Chicken with Spinach and Artichoke Rice Bowls is a heartwarming, effortless dish bringing together a sweet-tangy chicken glaze and vibrant veggies.


Ingredients

  • 1 box Knorr Selects Spinach & Artichoke Rice
  • 4 pieces Chicken Breasts
  • 1 large Sweet Potato, chopped
  • 1 small Zucchini, sliced
  • 1 medium Red Onion
  • 1 cup Grape Tomatoes, halved
  • 1/4 cup Honey
  • 2 tablespoons Stone Ground Mustard
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon Avocado or Olive Oil
  • 1 tablespoon Honey Wine or Apple Cider Vinegar
  • 2 cloves Garlic, minced
  • 1 pinch Salt
  • 4 slices Cooked Bacon, chopped

Instructions

  1. Whisk together the dressing ingredients in a measuring cup until smooth.
  2. Marinate chicken by pouring 1/3 of the dressing into a ziptop bag with the chicken breasts.
  3. Preheat the oven to 400°F (200°C). Drizzle a little avocado or olive oil on a baking pan and toss in the chopped sweet potatoes.
  4. Roast sweet potatoes for about 20 minutes or until tender.
  5. Heat a skillet over high heat and add 1-2 tablespoons of oil.
  6. Cook the chicken by placing it top side down in the skillet.
  7. Flip and finish cooking the chicken for another 6-7 minutes until thoroughly cooked.
  8. Add zucchini to the pan with more oil, cooking until browned and tender.
  9. Prepare the rice according to the package instructions.
  10. Assemble bowls by spreading the rice and topping it with chicken, sweet potatoes, zucchini, bacon, red onions, and tomatoes.
