  • 2 tablespoons soy sauce or tamari
  • 1/2 teaspoon red chili flakes (optional)
  • 2 pounds boneless skinless chicken thighs
  • Salt and freshly ground black pepper to taste

Instructions

  1. Make the marinade: In a medium bowl, whisk together honey, lime juice, lime zest, minced garlic, olive oil, and soy sauce until smooth and well combined. Season with salt, pepper, and chili flakes if using.
  2. Marinate the chicken: Place chicken thighs in a zip-top bag or shallow dish. Pour marinade over chicken, ensuring all pieces are well-coated. Marinate for at least 30 minutes at room temperature, or up to 24 hours in the refrigerator.
  3. Cook (choose your method):
    Oven: Preheat to 425°F. Place chicken on lined baking sheet and bake 20-25 minutes until golden and cooked through.
    Grill: Preheat to medium-high heat (400°F). Grill 6-8 minutes per side until internal temperature reaches 165°F.
    Air Fryer: Set to 380°F. Cook 12-15 minutes, flipping halfway through.
  4. Rest and serve: Let chicken rest 5 minutes before serving. Garnish with fresh lime wedges and chopped cilantro if desired.

Notes

For best results, don’t skip the lime zest – it adds incredible aromatic depth! Chicken thighs are more forgiving than breasts, but use a meat thermometer to ensure they reach 165°F internal temperature. This recipe is naturally dairy-free and can be made gluten-free by using tamari instead of soy sauce. Leftover chicken reheats beautifully and is perfect for meal prep.
