A quick and vibrant dish combining honey-lime marinated chicken with fluffy rice, fresh vegetables, and zesty toppings.
Ingredients

- 1½ lbs chicken breast or thighs
- 3 tbsp olive oil
- 2 tbsp honey
- Juice of 2 limes
- 3 cloves garlic (minced)
- 1 tsp chili powder
- 1 tsp cumin
- Salt & black pepper (to taste)
- 2 cups cooked rice (white or brown)
- 1 cup corn (fresh, canned, or frozen)
- 1 cup black beans (rinsed & drained)
- 1 avocado (sliced)
- ½ cup cherry tomatoes (halved)
- ¼ cup red onion (diced)
- Fresh cilantro (chopped)
- ½ cup Greek yogurt or sour cream (optional)
- 1 tbsp lime juice (optional)
- 1 tbsp honey (optional)
- 1 tbsp chopped cilantro (optional)
- Salt & pepper (to taste, optional)
Instructions
- In a bowl, whisk together olive oil, honey, lime juice, garlic, chili powder, cumin, salt, and black pepper for the marinade.
- Marinate chicken for 15–30 minutes.
- Cook rice according to package instructions; set aside.
- Heat a skillet over medium-high heat and cook chicken until golden and fully cooked, 5–6 minutes per side.
- In another pan or bowl, combine corn, black beans, cherry tomatoes, red onion, and fresh cilantro.
- Warm cooked rice in a bowl, top with honey-lime chicken and vegetable mixture. Add avocado slices and optional Greek yogurt/sour cream with lime juice, honey, or cilantro.
