Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 1/3 cup honey
- 1/4 cup fresh lime juice (about 2–3 large limes)
- 2 tablespoons soy sauce (low-sodium preferred)
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 green onions, sliced (for garnish)
- 1 tablespoon fresh cilantro, chopped (optional)
Instructions
- Prepare the sauce: In a medium bowl, whisk together honey, fresh lime juice, soy sauce, minced garlic, ground ginger, salt, and pepper until completely smooth.
- Prepare chicken: If using chicken breasts, pound to even thickness (about 3/4 inch). Season lightly with salt and pepper.
- Add to crockpot: Place chicken in crockpot in single layer. Pour honey lime sauce over chicken, ensuring all pieces are coated.
- Cook: Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until chicken reaches 165°F internal temperature.
- Shred chicken: Remove chicken from crockpot and shred with two forks.
- Thicken sauce: In small bowl, whisk cornstarch with water. Add to cooking juices in crockpot. Cook on HIGH for 10-15 minutes until sauce thickens.
- Combine: Return shredded chicken to thickened sauce, toss to coat. Let sit 5 minutes before serving.
- Serve: Garnish with green onions and cilantro. Serve over rice, in tacos, or with your favorite sides.
