  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon fresh cilantro, chopped (optional)

Instructions

  1. Prepare the sauce: In a medium bowl, whisk together honey, fresh lime juice, soy sauce, minced garlic, ground ginger, salt, and pepper until completely smooth.
  2. Prepare chicken: If using chicken breasts, pound to even thickness (about 3/4 inch). Season lightly with salt and pepper.
  3. Add to crockpot: Place chicken in crockpot in single layer. Pour honey lime sauce over chicken, ensuring all pieces are coated.
  4. Cook: Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until chicken reaches 165°F internal temperature.
  5. Shred chicken: Remove chicken from crockpot and shred with two forks.
  6. Thicken sauce: In small bowl, whisk cornstarch with water. Add to cooking juices in crockpot. Cook on HIGH for 10-15 minutes until sauce thickens.
  7. Combine: Return shredded chicken to thickened sauce, toss to coat. Let sit 5 minutes before serving.
