  • 1/4 teaspoon red pepper flakes (optional)
  • 2 pounds chicken (breasts, thighs, or tenders)
  • 1 tablespoon cornstarch (optional, for crispiness)
  • Salt and black pepper to taste
  • Fresh lime wedges for serving
  • Chopped cilantro for garnish

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together honey, fresh lime juice, soy sauce, minced garlic, olive oil, lime zest, ground ginger, and red pepper flakes if using.
  2. Prepare the chicken: Pat chicken completely dry with paper towels. Season both sides with salt and pepper. For extra crispiness, dust lightly with cornstarch.
  3. Marinate: Place chicken in a resealable bag or shallow dish. Pour marinade over chicken, ensuring all pieces are well coated. Marinate for at least 30 minutes at room temperature or up to 4 hours in refrigerator.
  4. Preheat air fryer: Preheat your air fryer to 380°F (193°C) for 3-5 minutes.
  5. Cook the chicken: Remove chicken from marinade, reserving excess. Place chicken in air fryer basket in single layer, not overcrowding. Cook for 12-18 minutes depending on cut (see notes), flipping halfway through.
  6. Baste and finish: At halfway point, flip chicken and brush with reserved marinade. Continue cooking until internal temperature reaches 165°F (74°C).
  7. Rest and serve: Let chicken rest for 3-5 minutes before slicing. Garnish with fresh lime wedges and chopped cilantro.

• Chicken tenders: 8-12 minutes
