- 3 cups corn kernels (fresh or frozen, thawed if frozen)
- 1/3 cup honey (raw or wildflower preferred)
- 1/2 cup unsalted butter, melted
- 2 large eggs, room temperature
- 1/2 cup sour cream
- 1/2 cup yellow cornmeal
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk (whole or 2%, buttermilk optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish generously with butter or cooking spray.
- In a medium bowl, whisk together the cornmeal, sugar, baking powder, and salt.
- In a large bowl, beat the eggs lightly. Add melted butter, honey, sour cream, and milk. Mix until smooth and glossy.
- Fold in the corn kernels, then gently stir in the dry cornmeal mixture until just combined. Do not overmix.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 50 to 55 minutes, until the top is golden brown and edges are bubbling. A toothpick inserted should come out mostly clean with a few moist crumbs.
- Optional: Immediately brush the top with a glaze made from 1 tablespoon melted butter mixed with 1 tablespoon honey.
- Let the casserole cool for at least 15 minutes before slicing to set.
