  • 1/2 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 cup sour cream
  • 1/2 cup yellow cornmeal
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (whole or 2%, buttermilk optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish generously with butter or cooking spray.
  2. In a medium bowl, whisk together the cornmeal, sugar, baking powder, and salt.
  3. In a large bowl, beat the eggs lightly. Add melted butter, honey, sour cream, and milk. Mix until smooth and glossy.
  4. Fold in the corn kernels, then gently stir in the dry cornmeal mixture until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 50 to 55 minutes, until the top is golden brown and edges are bubbling. A toothpick inserted should come out mostly clean with a few moist crumbs.
  7. Optional: Immediately brush the top with a glaze made from 1 tablespoon melted butter mixed with 1 tablespoon honey.
  8. Let the casserole cool for at least 15 minutes before slicing to set.
