This easy honey garlic glaze recipe creates a lacquered shine for salmon without a sugar crash. Gordon Ramsay’s method balances honey’s sweetness with soy, lemon, and a hint of chili. The glaze sticks beautifully to the fish when brushed on in the final minute of cooking.

- 3 Tbsp honey
- 3 Tbsp light soy sauce
- 2 Tbsp fresh lemon juice
- 1 Tbsp unsalted butter
- 2 garlic cloves, micro-planed
- ¼ tsp chilli flakes (optional)
- Pinch black pepper
Instructions
- Combine honey, soy sauce, and lemon juice in a small saucepan over medium heat.
- Bring to a gentle simmer for 2 minutes.
- Remove from heat and whisk in the butter until glossy.
- Stir in the grated garlic, chili flakes, and black pepper.
- Brush the honey garlic glaze over nearly-cooked salmon during the final minute of cooking.
- Serve extra honey garlic glaze on the side for dipping.
Notes
- If the glaze thickens too much while standing, loosen it with 1 tsp hot water and whisk.
- Use light soy sauce; dark soy sauce can overpower the honey.
- For air-fryer salmon, brush the honey garlic glaze on once halfway through cooking and again right after.
- To prevent burning in a cast-iron skillet, add the glaze during the last 60 seconds of cooking over medium heat.
- You can swap maple syrup for honey, using an equal volume. The glaze may be thinner, so reduce for 30 seconds longer.
