- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup honey
- 2 large eggs
- 1/2 cup milk
Instructions
- Preheat the oven to 400°F (200°C). Grease a 24-cup mini muffin tin with nonstick cooking spray.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, honey, eggs, and milk.
- Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).
- Scoop the batter evenly into the prepared mini muffin cups, filling them about 3/4 full.
- Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the poppers to cool in the pan for 5 minutes before transferring to a wire rack.
- Serve warm, with additional honey for drizzling if desired.
