This dish features succulent chicken thighs marinated in a sweet and tangy honey balsamic glaze, perfect for a flavorful dinner.

- 4 pieces bone-in (skin-on chicken thighs)
- ¼ cup balsamic vinegar
- ¼ cup honey
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh rosemary (chopped, optional)
- Fresh parsley for garnish
Instructions
- In a medium bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, thyme, salt, pepper, and Dijon mustard.
- Reserve ¼ cup of the marinade for basting later.
- Add the chicken thighs to the bowl and coat them well with the marinade. Cover and refrigerate for at least 1 hour.
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat.
- Remove the chicken thighs from the marinade and sear them skin-side down for about 5-7 minutes until golden brown.
- Flip the chicken thighs and sear the other side for another 3-4 minutes.
- Pour the reserved marinade over the chicken thighs and sprinkle fresh rosemary on top if using.
- Transfer the skillet to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Baste the chicken halfway through and broil for the last 2-3 minutes for extra glaze.
