- 8 ounces whipped topping, thawed

Instructions
- In a medium bowl, combine crushed chocolate cookies with melted butter. Press the mixture into a 9-inch pie pan and chill while you make the filling.
- Beat softened cream cheese in a large bowl until smooth and fluffy.
- Add powdered sugar and peppermint extract. Mix until combined. If using, stir in red food coloring until desired shade is reached.
- Fold in whipped topping gently until the mixture is airy and smooth.
- Spoon the peppermint filling into the prepared crust and spread evenly.
- Cover and refrigerate for at least 4 hours, or overnight for best texture.
