- 2 cups low-fat cottage cheese

- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the broccoli, zucchini, bell peppers, and onions.
- In a separate bowl, whisk together the cottage cheese, cheddar cheese, eggs, almond milk, garlic powder, oregano, salt, and black pepper until well combined.
- Spread the vegetable mixture evenly into a 9×13 inch baking dish.
