- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon maple syrup or honey
- 1 large egg
- 1/4 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 1 tablespoon chocolate chips (optional)
Instructions
- Blend the cottage cheese until smooth and creamy.
- In a microwave-safe ramekin or small bowl, whisk together the cottage cheese, egg, maple syrup or honey, and vanilla extract.
- Add the oat flour, cocoa powder, and baking powder. Stir to combine until a thick batter forms.
- If using, fold in the chocolate chips.
- Microwave on high for 60–90 seconds, depending on your microwave. The edges should be set and the center slightly gooey.
- Let it cool for one minute before serving warm or at room temperature.
