  • 1/2 onion, diced
  • 3 whole carrots, peeled and chopped
  • 2 ribs celery, diced
  • 2 teaspoons garlic, minced
  • 1 large potato, peeled and chopped
  • fresh parsley for garnish
  • 3 Tablespoons tomato paste
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 Tablespoons dried Italian seasoning
  • 4 cups vegetable broth
  • 1 (14 ounce) can diced tomatoes
  • 3 (15 ounce) cans white beans, drained and rinsed

Instructions

  1. In a large pot over medium-high heat, heat the olive oil. Add the diced onions, chopped carrots, and diced celery. Cook and stir these vegetables for about 8 minutes until they become softened and fragrant.
  2. Stir in the minced garlic, tomato paste, dried Italian seasoning, kosher salt, and black pepper. Continue stirring and cook for 1 minute to allow the spices and tomato paste to develop their flavors.
  3. Pour in the vegetable broth and the canned diced tomatoes with their liquid. Add the chopped potatoes and the drained and rinsed white beans. Stir everything together thoroughly.
  4. Cover the pot with a lid and reduce the heat to low to maintain a gentle simmer. Let the stew cook for 20 minutes, allowing the potatoes to become tender and the flavors to meld beautifully.
  5. Remove from heat. Garnish the stew with fresh parsley and serve warm, ideally accompanied by a side of crusty French bread for dipping.
