This hearty crockpot stuffed pepper soup with Italian sausage is a flavorful and easy-to-make comfort meal. It combines the taste of stuffed peppers with a rich tomato-based soup, perfect for busy weeknights.
Ingredients
- 1 pound ground Italian sausage (hot or mild)
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 large green bell peppers, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 28-ounce can crushed tomatoes
- 1 15-ounce can diced tomatoes
- 1 15-ounce can tomato sauce
- 3 cups low-sodium beef broth or chicken broth
- 1/2 cup uncooked white rice (or cauliflower rice for low-carb)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Optional Garnishes: Fresh parsley (chopped), Shredded mozzarella or Parmesan cheese, Sour cream
Instructions
- Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook until browned, about 5-7 minutes. Drain excess grease.
- Add chopped onion to the skillet and cook until soft, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Combine browned sausage, sautéed onion and garlic, diced bell peppers, crushed tomatoes, diced tomatoes, tomato sauce, rice (or cauliflower rice), beef broth, oregano, basil, smoked paprika, red pepper flakes, salt, and pepper in a crockpot. Stir well.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Stir occasionally if possible. The rice will cook and absorb flavors.
- Taste and adjust seasoning. If the soup is too thick, add a splash more broth.
- Garnish with fresh parsley, cheese, or sour cream before serving.
