Ingredients

  • 2 lbs beef chuck roast (cut into 1-inch cubes)
  • 4 medium potatoes (peeled and diced)
  • 3 large carrots (sliced)
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup red wine (optional, can substitute with more broth)
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • to taste Salt and pepper
  • 2 tbsp olive oil
  • 1 cup frozen peas (added in the last 30 minutes)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. In a large skillet over medium heat, add olive oil and sear the beef cubes until browned on all sides.
  2. Transfer the browned beef to the crockpot.
  3. In the same skillet, sauté the chopped onion and garlic until the onion is translucent.
  4. Add the onion and garlic to the crockpot.
  5. Layer the diced potatoes, sliced carrots, and frozen peas over the beef and onions in the crockpot.
  6. Combine the beef broth, red wine, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper in a bowl and stir well.
  7. Pour the mixture over the ingredients in the crockpot and stir gently to combine.
  8. Cover the crockpot and cook on low for 8 hours or on high for 4 hours.
  9. Once cooked, remove the bay leaf and adjust seasoning if necessary.
  10. Serve hot, garnished with fresh parsley.
