  • 4 cups chicken broth
  • 4 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1 jalapeño, sliced

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened.
  2. Stir in the minced garlic, Cajun seasoning, cumin, smoked paprika, black pepper, and salt. Cook for 30 seconds until fragrant.
  3. Add the shredded chicken, white beans, red beans, and chicken broth. Stir well and bring the mixture to a gentle simmer.
  4. Simmer uncovered for 15 to 20 minutes so the flavors blend and the broth reduces slightly.
  5. Lower the heat and stir in the cream cheese until completely melted and smooth.
  6. Pour in the heavy cream and stir until the chili is creamy and fully combined.
  7. Taste and adjust seasoning if needed. For a thicker texture, mash some of the beans lightly in the pot.
