  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano or thyme (or substitute with basil or mint)
  • 1/4 cup fresh parsley or dill (optional)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchinis and squeeze out as much moisture as possible.
  2. In a large mixing bowl, combine the drained zucchini with eggs, oat or almond flour, garlic, herbs, and any mix-ins. Stir until a thick batter forms.
  3. Preheat a non-stick skillet over medium heat and add a splash of olive oil.
  4. Using a ¼ cup measuring cup, scoop out the batter and pour it into the skillet, gently flattening each scoop.
  5. Cook for 3-4 minutes until golden brown, then flip and cook for another 2-3 minutes.
  6. Transfer fritters to a plate lined with paper towels to absorb excess oil, then serve warm.
