- 2 cups zucchini, grated (drained well)
- 2 eggs
- 1 cup oat flour or almond flour
- 1/4 cup parmesan cheese (optional)
- 1/2 cup Greek yogurt or cottage cheese (dairy-free option available)
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano or thyme (or substitute with basil or mint)
- 1/4 cup fresh parsley or dill (optional)
- 2 tablespoons olive oil (for frying)
Instructions
- Grate the zucchinis and squeeze out as much moisture as possible.
- In a large mixing bowl, combine the drained zucchini with eggs, oat or almond flour, garlic, herbs, and any mix-ins. Stir until a thick batter forms.
- Preheat a non-stick skillet over medium heat and add a splash of olive oil.
- Using a ¼ cup measuring cup, scoop out the batter and pour it into the skillet, gently flattening each scoop.
- Cook for 3-4 minutes until golden brown, then flip and cook for another 2-3 minutes.
- Transfer fritters to a plate lined with paper towels to absorb excess oil, then serve warm.
