- ⅔ cup sliced carrots
- ½ cup diced onion
- 2 garlic cloves – minced
- 1 ½ cups chopped green cabbage
- ½ cup green beans
- 3 cups broth – vegetable, chicken or beef, whichever you like best
- 2 tablespoons tomato paste
- 2 dashes of Worcestershire sauce
- 1 tablespoon canola oil
- ½ teaspoon dried basil
- ¼ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- In a large saucepan, heat 1 tablespoon of canola oil over medium-low heat. Add sliced carrots, diced onion, and minced garlic, cooking gently until they soften and release their flavors, about 5 minutes.
- Pour in the 3 cups of your choice of broth. Add chopped green cabbage, green beans, tomato paste, dried basil, oregano, Worcestershire sauce, salt, and pepper. Stir everything together to combine the ingredients evenly.
- Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover with a lid, and let the soup simmer gently for about 20 minutes. This allows the vegetables to cook through and the flavors to meld. Taste and adjust the salt and pepper as needed.
- Ladle the hot soup into bowls and serve immediately, ideally accompanied by warm bread for dipping and added comfort.
