Ingredients

  • 4 cups fusilli pasta
  • 1 tablespoon olive oil
  • 3 cups corn kernels
  • 1 jalapeño, seeds removed and finely diced
  • 1/2 cup cotija cheese, divided
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 teaspoon chili powder (for topping)
  • Lime wedges, for serving
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon chili powder (for dressing)
  • Salt, to taste

Instructions

  1. Bring a generously salted large pot of water to a rolling boil. Add the fusilli pasta and cook according to the package instructions until al dente. Drain thoroughly.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the corn kernels and sauté for 3-5 minutes, stirring frequently, until lightly charred. Add the finely diced jalapeño and continue to sauté for an additional minute. Remove from heat and set aside.
  3. In a medium bowl, whisk together the Greek yogurt, mayonnaise, fresh lime juice, Worcestershire sauce, 1/4 teaspoon chili powder, and half of the cotija cheese until smooth and well combined. Season with salt to taste. Alternatively, blend these ingredients in a food processor until creamy.
  4. Transfer the cooked and drained pasta to a large serving bowl. Add the sautéed corn and jalapeño mixture. Drizzle with the prepared dressing, tossing gently until the pasta and vegetables are evenly coated.
  5. Sprinkle the pasta salad with the remaining cotija cheese, chopped fresh cilantro, and the remaining 1/2 teaspoon chili powder. Serve immediately, garnished with fresh lime wedges.
