- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1 scoop vanilla protein powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, cold and cubed
- 2–3 tbsp ice water
- 1/2 cup Greek yogurt
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 cup berries, fresh or frozen
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, whisk together whole wheat flour, almond flour, protein powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.
- Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In a small bowl, mix Greek yogurt, maple syrup, and vanilla extract for the filling. Stir in the berries.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness. Cut into two rectangles.
- Repeat with the second disc of dough. You should have four rectangles in total.
- Place two rectangles on the prepared baking sheet. Spoon about 2 tablespoons of the berry filling onto each rectangle, leaving a 1/2-inch border.
- Brush the borders with a little water. Place the remaining two dough rectangles on top.
- Press the edges firmly to seal. Crimp the edges with a fork.
- Cut a small slit in the top of each pop tart to allow steam to escape.
- Brush the tops with the beaten egg wash.
- Bake for 20-25 minutes, or until golden brown.
- Let cool completely before serving. These are healthy protein pop tarts.

- For a sugar-free option, use a sugar substitute in the filling.
- Add a drizzle of Greek yogurt frosting for extra flavor.
