Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1 scoop vanilla protein powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, cold and cubed
  • 23 tbsp ice water
  • 1/2 cup Greek yogurt
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup berries, fresh or frozen
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, whisk together whole wheat flour, almond flour, protein powder, and salt.
  2. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  4. Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. In a small bowl, mix Greek yogurt, maple syrup, and vanilla extract for the filling. Stir in the berries.
  6. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness. Cut into two rectangles.
  8. Repeat with the second disc of dough. You should have four rectangles in total.
  9. Place two rectangles on the prepared baking sheet. Spoon about 2 tablespoons of the berry filling onto each rectangle, leaving a 1/2-inch border.
  10. Brush the borders with a little water. Place the remaining two dough rectangles on top.
  11. Press the edges firmly to seal. Crimp the edges with a fork.
  12. Cut a small slit in the top of each pop tart to allow steam to escape.
  13. Brush the tops with the beaten egg wash.
  14. Bake for 20-25 minutes, or until golden brown.
  15. Let cool completely before serving. These are healthy protein pop tarts.
