Description

Healthy Christmas Cookies for Diabetics that taste divine.

Ingredients

Scale
  • 1 cup Butter (Substitute with coconut oil for a dairy-free version.)
  • 1 cup Swerve Confectioner’s Sugar
  • 1 large Egg (Acts as a binder and adds moisture; no substitutions recommended.)
  • 1 teaspoon Mint Extract (Enhances the minty flavor; swap with vanilla extract for a different twist.)
  • 2 cups Almond Flour (Provides structure; can be exchanged with any nut flour for a similar consistency.)
  • 1/2 teaspoon Salt (Balances sweetness; standard table salt works.)
  • 1/2 cup Cocoa Powder (Gives a rich chocolate flavor; Dutch-processed cocoa can be used.)
  • 1/4 cup Extra Swerve Confectioner’s Sugar (Roll the cookies in this after baking for an added touch of sweetness.)

Instructions

  1. Cream the softened butter in the KitchenAid Mixer on medium speed for 2-3 minutes until creamy and smooth.
  2. Add the Swerve Confectioner’s Sugar and mix on medium speed for 3-4 minutes until light and fluffy.
  3. Incorporate the egg and mint extract, mixing on low speed for 1-2 minutes until smooth.
  4. Whisk together almond flour, salt, and cocoa powder in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, mixing until a dough forms (2-3 minutes).
  6. Shape the dough into 1-inch balls and place them on lined baking sheets, spaced 2 inches apart.
  7. Preheat oven to 325°F (163°C) and bake the cookies for 12 minutes.
  8. Let cookies cool on the baking sheets for 5 minutes before rolling them in extra Swerve Confectioner’s Sugar.
  9. Transfer cookies to a wire rack to cool completely before storing.
