- 1/4 cup Extra Swerve Confectioner’s Sugar (Roll the cookies in this after baking for an added touch of sweetness.)
Instructions
- Cream the softened butter in the KitchenAid Mixer on medium speed for 2-3 minutes until creamy and smooth.
- Add the Swerve Confectioner’s Sugar and mix on medium speed for 3-4 minutes until light and fluffy.
- Incorporate the egg and mint extract, mixing on low speed for 1-2 minutes until smooth.
- Whisk together almond flour, salt, and cocoa powder in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, mixing until a dough forms (2-3 minutes).
- Shape the dough into 1-inch balls and place them on lined baking sheets, spaced 2 inches apart.
- Preheat oven to 325°F (163°C) and bake the cookies for 12 minutes.
- Let cookies cool on the baking sheets for 5 minutes before rolling them in extra Swerve Confectioner’s Sugar.
- Transfer cookies to a wire rack to cool completely before storing.
