Irresistibly Creamy Chicken Cauliflower Rice Casserole

- 3 cups shredded chicken rotisserie or cooked chicken breast
- 4 cups cauliflower rice store-bought or homemade
- 8 oz cream cheese (softened) or Greek yogurt for a lighter version
- 1 cup shredded cheddar cheese divided, or use a mix of cheeses like mozzarella and parmesan
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt adjust to taste
- ½ tsp black pepper
- 1 tbsp olive oil for sautéing the cauliflower rice
- 1 cup chopped spinach, broccoli florets, or sliced mushrooms (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat and sauté the cauliflower rice for 5-7 minutes, stirring frequently.
- Remove the skillet from heat and let the cauliflower rice cool slightly while you prepare the creamy mixture.
- In a large mixing bowl, combine the softened cream cheese, shredded chicken, garlic powder, onion powder, paprika, salt, and black pepper.
- Fold in the sautéed cauliflower rice and half of the shredded cheddar cheese until everything is well combined.
- Transfer the mixture to your prepared baking dish and spread it evenly, then top with the remaining cheddar cheese.
- Bake for 25-30 minutes, until the top is golden brown and the edges are bubbling.
- Let the casserole rest for 5 minutes before serving.
