- 1 (20-ounce) bag frozen shredded hashbrowns, thawed
- 8 large eggs
- 1 cup milk
- 1½ cups shredded cheddar or mozzarella cheese
- 1 cup cooked turkey or chicken breakfast sausage (optional)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Diced bell peppers
- Chopped spinach
- Green onions
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- If using sausage, cook in a skillet over medium heat until fully cooked and lightly browned. Set aside.
- In a large bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and onion powder until smooth.
- Spread thawed hashbrowns evenly in the baking dish. Add cooked sausage and optional vegetables, then sprinkle cheese evenly over the top.
- Pour the egg mixture evenly over all ingredients, gently pressing down to distribute.
- Bake uncovered for 40–50 minutes, until eggs are fully set and the top is lightly golden.
- Let rest for 5–10 minutes before slicing and serving.
