- 2 pounds Yukon Gold potatoes, peeled and diced
- 6 cloves garlic, minced
- 1 large onion, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and sauté for 3-4 minutes until fragrant.
- Add the diced potatoes and thyme, and pour in the broth. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, purée the soup until smooth and creamy. Alternatively, transfer the soup to a blender and blend in batches.
- Stir in the heavy cream and season with salt and pepper to taste.
