Ham and Cheese Pinwheels with Cranberry Mustard Dip

- 6 large flour tortillas (10-inch, burrito-size)
- 8 oz cream cheese (softened)
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
- 12 slices of deli ham (thinly sliced)
- 6 slices of cheddar cheese (or Swiss)
- 1 cup baby spinach (optional)
- 1/2 cup whole cranberry sauce
- 2 tablespoons Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt to taste
Instructions
- In a mixing bowl, beat together softened cream cheese, Dijon mustard, honey, garlic powder, black pepper, and smoked paprika until smooth.
- Place one tortilla flat on your cutting board and spread the cream cheese mixture evenly to the edges.
- Lay 2 slices of ham on top, slightly overlapping, then add 1 slice of cheddar cheese. Add spinach if desired.
- Roll the tortilla tightly from one end to the other. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Repeat with remaining tortillas.
- In a small bowl, whisk together cranberry sauce, Dijon mustard, apple cider vinegar, and honey. Adjust sweetness or tang as needed.
- Once chilled, remove plastic wrap and trim uneven ends. Slice each roll into 6 equal pieces.
- Serve chilled or at room temperature.
