- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup Guinness stout
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup Baileys Irish Cream
Instructions
- Preheat oven to 350°F. Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, combine the Guinness, oil, eggs, and vanilla.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the prepared baking pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely.
- In a large bowl, beat the butter until light and fluffy. Gradually add the powdered sugar and Baileys, mixing until well combined and smooth.
- Spread the Baileys frosting evenly over the top of the cooled cake.
- Refrigerate the cake for at least 2 hours before serving.
