  • 1 pound ground beef (80/20)
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Dice the potatoes into small, even cubes.
  3. Chop the onion and mince the garlic.
  4. Heat olive oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant and softened, about 3–4 minutes.
  5. Add the ground beef, season with salt, black pepper, thyme, and paprika, and cook until browned.
  6. Pour in the beef broth and stir, allowing it to simmer briefly.
  7. In a large bowl, combine the diced potatoes with the beef mixture, then fold in sour cream and half of the cheese.
  8. Transfer the mixture into a baking dish, sprinkle the remaining cheddar on top, cover with foil, and bake for 30 minutes.
  9. Remove the foil and bake an additional 10–15 minutes until the cheese is melted and bubbling.
  10. Let the casserole rest for 10 minutes before serving.
