Ingredients
Scale
- 2 lbs salmon filets
- 1/2 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp water
- 2 tsp sesame oil
- 3 tbsp brown sugar or coconut sugar
- 2 cloves garlic, minced
- 1 tbsp fresh ground ginger (or 1/4 tsp ground ginger)
- 1 tsp arrowroot powder (or cornstarch) mixed with 1 tbsp water
- Sesame seeds, for topping
Instructions
- In a bowl, combine soy sauce, rice vinegar, water, sesame oil, brown sugar, minced garlic, and fresh ground ginger. Whisk well until the sugar is dissolved and ingredients are thoroughly mixed.
- Place the salmon filets in a large bowl or ziplock bag and pour half of the prepared marinade over them. Ensure the salmon is well coated. Seal and refrigerate, letting it marinate for 1 to 4 hours to absorb the flavors.
- About 10 minutes before cooking, preheat your grill to a high temperature between 450-500°F. Lightly grease the grill grates with nonstick spray or oil to prevent sticking.
- Remove the salmon from the marinade, placing the filets skin side up if the skin is present. Discard the used marinade. Close the grill lid and cook for 7-8 minutes. The salmon should release easily from the grill grates.
- Gently flip the salmon using a fish spatula. If the salmon sticks, allow it a few more minutes to cook. After flipping, cook for an additional 2-3 minutes or until the internal temperature reaches 130°F. Remove from the grill and let rest for 10 minutes to allow juices to redistribute.
- While the salmon rests, pour the remaining fresh marinade into a saucepan over medium-high heat. Once the marinade begins bubbling, stir in the arrowroot or cornstarch slurry. Continue to simmer for 2 minutes until the sauce thickens. Turn off the heat; the sauce will continue to thicken as it cools.
- Brush the thickened teriyaki marinade over the grilled salmon filets generously. Sprinkle sesame seeds on top for added flavor and texture. Serve immediately.
