Description

Ingredients

  • 2 lbs salmon filets
  • 1/2 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp water
  • 2 tsp sesame oil
  • 3 tbsp brown sugar or coconut sugar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ground ginger (or 1/4 tsp ground ginger)
  • 1 tsp arrowroot powder (or cornstarch) mixed with 1 tbsp water
  • Sesame seeds, for topping

Instructions

  1. In a bowl, combine soy sauce, rice vinegar, water, sesame oil, brown sugar, minced garlic, and fresh ground ginger. Whisk well until the sugar is dissolved and ingredients are thoroughly mixed.
  2. Place the salmon filets in a large bowl or ziplock bag and pour half of the prepared marinade over them. Ensure the salmon is well coated. Seal and refrigerate, letting it marinate for 1 to 4 hours to absorb the flavors.
  3. About 10 minutes before cooking, preheat your grill to a high temperature between 450-500°F. Lightly grease the grill grates with nonstick spray or oil to prevent sticking.
  4. Remove the salmon from the marinade, placing the filets skin side up if the skin is present. Discard the used marinade. Close the grill lid and cook for 7-8 minutes. The salmon should release easily from the grill grates.
  5. Gently flip the salmon using a fish spatula. If the salmon sticks, allow it a few more minutes to cook. After flipping, cook for an additional 2-3 minutes or until the internal temperature reaches 130°F. Remove from the grill and let rest for 10 minutes to allow juices to redistribute.
  6. While the salmon rests, pour the remaining fresh marinade into a saucepan over medium-high heat. Once the marinade begins bubbling, stir in the arrowroot or cornstarch slurry. Continue to simmer for 2 minutes until the sauce thickens. Turn off the heat; the sauce will continue to thicken as it cools.
  7. Brush the thickened teriyaki marinade over the grilled salmon filets generously. Sprinkle sesame seeds on top for added flavor and texture. Serve immediately.
